The Temperature Control Truth in Winemaking

What if one of the most important ingredients in high-quality wine isn’t an ingredient at all?

At LaBelle Winery, we believe great wine is born from precision, patience, and our philosophy of Clean and Crafted Minimal Intervention winemaking. One of the most powerful tools we use to uphold that philosophy is temperature control. You won’t see it on a label, but it plays a vital role in wine’s flavor, clarity, and long-term stability.

In commercial winemaking, rushed production or poor temperature control often leads to instability. To fix that, many producers turn to chemical stabilizers. These substances mask flaws but interfere with a wine’s natural character.

We take a different path.

Why Temperature Control Matters:

From fermentation to aging, temperature affects every stage of winemaking. It determines how yeast behaves, how aromas develop, and how a wine’s structure evolves. One of its most important roles is stabilization.

Cold Stabilization — The Natural Way:

Wine contains tartaric acid, a natural grape compound. If not stabilized before bottling, it can form harmless crystals later. The French call them wine diamonds. While they are a sign of purity, consumers often mistake them for flaws.

That’s why we cold stabilize using temperature, not additives. Our stainless steel tanks are double-walled, with food-grade glycol circulating between the walls to chill the wine. This cooling agent never touches the wine itself.

Once the crystals have formed and the wine is cold stable, we filter the wine the day before bottling. Cold stabilization is the last step in a wine’s journey before bottling. It is a clean, controlled approach that avoids chemical shortcuts and stays true to our Clean and Crafted Minimal Intervention winemaking philosophy.
