- First Course: Citrus and Beet Salad: Baby arugula, roasted beets, red onion, goat cheese, mandarin orange segments, tossed in an orange balsamic vinaigrette
- Entree: Chicken Kiev: Parsley and garlic butter stuffed breaded chicken breast with roasted lemon herb fingerling potato and green beans
- OR Vegetarian Eggplant Tower: Fried, breaded eggplant, herbed ricotta, artichoke and olive salad, topped with a balsamic glaze and fresh basil oil
- Dessert: Fruit Wine Gelatin Layered Panna Cotta: Vanilla bean panna cotta, topped with a layer of fruit wine gelatin and macerated blackberries
